Björn's Saffron Honey is an homage to winter baked goods in Sweden, where Pontus, our beekeeper, is from. Saffron is the most precious spice in the world and its aromatic hay-like flavor is a perfect complement to our honey. Prized not only for this unique taste but also for the dark golden color it imparts on food. We sourced the highest quality Spanish saffron and blended it into our Colorado Clover Blossom Honey for a taste that will dance on your tongue and make sweet or savory dishes sing.
Saffron comes from the flower Crocus sativus known as "saffron crocus." It is actually the vivid crimson stigma and styles of the flower, called threads, that are collected and dried to create this rare spice. Saffron has been used throughout the Mediterranean and the Middle East. It is a key ingredient in dishes like Milanese risotto of Italy, jeweled-rice of Iran, paella of Sprain and bouillabaisse of France as well as biryani of South Asia.
It is also famous for its use in Swedish baking, especially around Christmas. Here at Björn's, we wanted to bring the taste of Sweden at the Holidays home to you. Even if you can't try a fresh-baked Lussekatter, or saffron buns used to celebrate St. Lucia, you can have some saffron honey drizzled on warm bread, which is just as festive and delicious!
