Smoked Chicken Wings with Clover Blossom Honey BBQ Sauce

As the summer turns to fall, we're spending as much time outdoors as possible, which means a lot of dinners cooked outside. There's nothing quite like a late-summer BBQ, and an easy homemade sauce sweetened with our Clover Blossom Honey is the perfect accompaniment to a beef brisket, pork ribs or - in this case - smoked chicken wings. 

1/2 sweet onion, diced

4 garlic cloves, chopped

1 1/2 cup ketchup

1/2 cup apple cider vinegar

1/3 cup honey

1/3 cup Worcestershire sauce

2 tsp chili powder

1/2 tsp cumin

1/4 tsp chili flakes

In a saucepan over low/medium heat, sauté onion until soft, then add garlic and sauté until fragrant. Add the remaining ingredients and stir to combine. Bring to a simmer and reduce to desired thickness, around 20 minutes. Strain to remove onions (save them for topping or use them in sandwiches, etc.). 

To make the wings, dry chicken wings with paper towels to remove moisture. Prepare a seasoning mixture of salt and pepper, or your favorite BBQ rub, and 1 tsp of baking powder per pound of wings - then toss the wings in the mixture. Smoke wings at 325 degrees for 20 minutes, turn them, and finish smoking until their internal temp reaches 165 degrees. Toss the wings with enough of the sauce to lightly coat them, and return them to the smoker for 5-10 minutes a side. Remove them from the smoker, toss with desired quantity of BBQ sauce, and serve with pickled cucumbers and red onions, and blue cheese dressing for dipping. Enjoy!
