Whipped Cardamom Honey Pear and Apple Crumble
Fall is a wonderful time for this recipe but it works anytime of the year! Our Whipped Cardamom Honey is the perfect yet unexpected way to spice a crumble. It gives the fruit those cozy spiced vibes but will surprise your family with this classic flavor of Swedish baking. Apples, pears, and quince work great for this recipe, in any combination!
Ingredients for Crumble:
2/3 cup all-purpose, bread or other flour of your preference
2.5 - 3.5 tablespoons cane sugar
½ teaspoon sea salt
¼ teaspoon ground cardamom
5 tablespoons very cold butter (lightly frozen works best)
Ingredients for Filling:
2 and 3/4 cups pears and/or apples, peeled and sliced into small chunks
Squeeze of fresh lemon juice
2-4 tablespoons Björn’s Whipped Cardamom Honey (adjust based on how sweet you want the outcome and how sour your fruit is)
½ - 2 tablespoons cane sugar (optional)
1 and 1/4 teaspoons small pearl tapioca
1/4 teaspoon sea salt
Directions:
Chop fruit into small pieces, ensuring they are as consistent as possible. Smaller pieces yield a softer crumble. Add lemon juice, Björn’s Whipped Cardamom Honey, cane sugar, pearl tapioca, and salt. Mix well until tapioca is distributed evenly and other ingredients evenly coat the fruit.
Cut butter into small cubes and drop it into a bowl where you have already mixed the flour, sugar, salt, and cardamom. Use your fingers to break apart the butter and mix it into the flour mixture. Using lightly frozen butter helps avoid overmixing. It’s good if the mixture has small chunks of butter visible; this makes for a lighter crumble. You can also add other ingredients to the crumble, like nuts, oats, or different types of flour. Pour fruit into the 8” oval baking dish and press down gently. Add crumble and press down gently.
Bake for 45-55 minutes until it’s bubbling vigorously on the sides, and the crumble topping is deep golden brown. Let cool for 5-10 minutes and serve with vanilla ice cream, freshly whipped cream, or cold cream. Enjoy!
